Southwest Salad

Make this salad a meal!

This salad is the perfect combination of flavors and textures to work as a light meal. And if you are looking to increase your protein you could easily toss in some grilled shrimp of chicken making it even more perfect.

  • 4 cups Green leaf Lettuce
  • 1/2 cup Cooked Black Beans
  • 1/2 cup Cooked Corn
  • 1/2 cup Cilantro chopped
  • 1 whole Avocado diced
  • 1 cup Cherry tomatoes
  • 1 whole Lime juiced
  • 1 tablespoon Honey
  • A pinch of Salt


  • Toss together lettuce, black beans, cilantro, corn, avocado, and tomatoes.
  • To make the dressing, combine lime juice, honey and sea salt in a small jar and shake until well mixed. Drizzle the dressing over the salad and toss to coat lightly.


You may have dressing left over, which is perfectly okay. It will keep well in the refrigerator for about a week.
