Having pre-cooked chicken makes tossing this recipe together in minutes possible. ¬†However pre-cooked chicken isn’t necessary to enjoy our Saucy Dijon Chicken. You will simply need to adjust cooking time to ensure the chicken is cooked all the way through.¬†

Saucy Dijon Chicken Thighs

  • 4 whole Lemon Rosemary Chicken Thighs
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1 1/2 cup Chicken Stock
  • 2 teaspoon Arrowroot Powder (cornstarch works too)
  • 2 tablespoons Dijon Mustard
  • 2 whole Green Onions
  • 1 cup Frozen Peas
  • 1 cup Frozen Green Beans
  • 1 cup Carrots sliced
  • 2 cups Button mushrooms quartered


  • Preheat oven to 425 degrees fahrenheit. Lay chicken thighs out on a shallow baking dish. Mix in green onions, peas, green beans, carrots and mushrooms.
  • Whisk together chicken stock, arrowroot powder, and Dijon mustard. Pour chicken stock mixture over top of chicken. Bake 15 minutes or until heated through.
