A few years ago while I was visiting my childhood friend Crystal of Cloud Nine Organizing, she took me to one of her favorite breakfast spots. That was where I first had Smoked Gouda Polenta, or as those of us from Texas call it, grits.

It was love at first bite! The rich creaminess of the Gouda cheese combined with polenta offers incredible comfort with even more flavor. Leaving that restaurant I promised myself I would find a way to recreate this recipe. It took a few tries, but I finally did it, and this has quickly become a family favorite, especially with Sriracha Shrimp with a side of Kale & Bacon.

Instructions
  1. Bring the water and half n’ half to a boil over medium-high heat. Add the salt and butter.
  2. Slowly pour in polenta, whisking to avoid lumps. Cook 5 - 7 minutes stirring continuously for smooth creamy polenta.
  3. Remove from heat, and stir in cheese. Garnish with crushed red pepper as desired.
