Instructions
  1. Slice mini meatloaves in half to form thinner steaks. Set aside until ready to use.
  2. Heat butter in a large skillet over medium high heat. Add in onions and cook until tender and slightly charred around the edges. About 3 minutes.
  3. Add 1 1/2 cup of beef stock and mushrooms and bring to a low bowl.
  4. Combine remaining 1/2 cup of beef stock with cornstarch into a jar with a secure lid. Close jar and shake vigorously to combine ingredients. Add this mixture to the skillet.
  5. Add in mini meatloaf steaks and cook until gravy is thickened. Serve over mashed potatoes with green beans.
