Add chopped veggies to a large bowl and set aside. Combine cilantro, olive oil, garlic and salt into a blender and pulse until smooth. Pour mixture over chopped veggies and combine thoroughly. Set slaw aside until ready to serve.
Heat pork and beef stock together in a medium saucepan until heat through. About 10 minutes.
To serve top buns with pork and drizzle with your favorite Bar-B-Q sauce. Top with 1/4 cup of Cilantro Slaw, serving additional slaw on the side.
