This Lemon Cilantro Quinoa is one of my favorite recipes, that tastes great, is easy to make and can be services warm or cold. I use this recipe for my weekend meal preps, a weeknight side dish, an I have even been known to triple it when I need a fast and easy dish for a potluck.

Instructions
  1. Wash quinoa in a fine mesh strainer, draining out any excess liquid. (Quinoa can have a soapy flavor if not washed.)
  2. Add water and quinoa to a medium saucepan and bring to a boil. Reduce heat to a simmer, and cover. Cook until all liquid has been absorbed, about 15 minutes.
  3. While quinoa is cooking, juice & zest lemon and chop cilantro. Add lemon, cilantro, and salt to the cooked quinoa and stir to mix well. Serve warm right away, or store in the refrigerator for 30 minutes or more to serve cold.
