When it comes to guacamole there are a ton of variations out there. Anything from the super simple to the incredibly complicated and each have their own unique flavor profile. I am a fan of the simple myself and this recipe is as simple as it gets. Plus, I can literally whip this up minutes before dinner is served, and it goes great with roast chicken, as well as just about any Mexican dish you can imagine.
And for the citrus lovers out there, I highly recommend you try doubling the lime in this recipe. While traveling in Mexico a few months ago, that is exactly how my friend Irina and I had our guac made at a small guacamole stand and it was AMAZING!
