  1. Bake sweet potatoes and allow to cool. Preheat oven to 350 degrees. Peel sweet potatoes and blend until smooth in a food processor.
  2. Add in eggs, melted coconut oil, cocoa powder, sea salt vanilla, sugar, flour and cinnamon. Blend until smooth.
  3. Grease an 8"" x 8"" cake pan, and pour in the batter. Bake at 350 for 20 - 25 minutes. Allow cake to cool for 5-10 minutes before adding ganache.
Ganache Frosting
  1. Add water to the bottom pan of a double boiler. Add chips and coconut oil to the top pan. Heat until smooth, about 5 minutes. Spread ganache over cake, and top with chopped pecans.
