Quick & Easy Buffalo Chicken Sliders
At the end of a long day working in the yard, there is nothing quite like an ice cold beer and a quick toss together meal. These Buffalo Chicken Sliders go perfectly with your favorite beer and can be tossed together in no time.
Special Note: I love the flavor of kale when sautéed in coconut oil. It makes the kale beautifully tender and brings out a nice subtle sweet flavor. If you aren’t a fan of coconut oil you can easily substitute olive oil.
Buffalo Chicken Sliders
Heat butter in a medium skillet over medium-high heat. Add in shredded chicken and Sriracha sauce. Cook until heat through, and chicken is well coated. About 10 minutes.
Heat coconut oil in another skillet over medium-high heat. Add in onion and cook until tender, about 2-3 minutes. Add kale and saute until a vibrant green. About 5 minutes.
Slice Sweet Red Pepper and Brioche Buns. Add 1/2 cup chicken mixture to a bun. Top with kale and onions, and sliced sweet peppers. Serve and enjoy!
