Preheat oven to 300 degrees F. In a large bowl combine oats, walnuts, pecans, cinnamon, nutmeg.
Over medium-low heat melt coconut oil and honey. Add in almond extract and applesauce, mixing together well.
Combine oat mixture with applesauce mixture, combining everything well. Mix in cranberries.
Line a 13x9 cooking sheet with parchment paper and spread granola mixture out evenly. Bake for 75 minutes. Allow granola to cool completely before breaking up. Store in an air tight container for up to 2 weeks.
For granola bars, use steel cut oats, as they tend to hold together better.
