Quick & Easy Chicken Tacos



***Cooking note: This recipe was tossed together using pre-cooked Lemon Rosemary Chicken. Having pre-cooked chicken makes tossing this recipe together in minutes possible.  However pre-cooked chicken isn’t necessary to enjoy this recipe. You will simply need to adjust cooking time to ensure the chicken is cooked all the way through.

  • 2 cups Shredded Chicken
  • 1/2 bunch Cilantro chopped
  • 8 ounces Tomatillo Salsa
  • 1 whole Sweet Red Bell Pepper seeded and sliced
  • 1 whole Yellow Bell Pepper seeded and sliced
  • 8 whole Soft Corn Tortillas
  • 1 cup Colby-Jack Cheese shredded
  • 1 whole Lime wedged
  • 2 whole Jalapeno Peppers seeded and sliced


  • Pour salsa over the chicken, mix thoroughly and cook on medium heat, stirring occasionally, until heated through, about 5-7 minutes. Add peppers and cook 3-5 more minutes.
  • While chicken is cooking, warm tortillas in another skillet on medium low heat until your desired crispness (corn tortillas will become crispier the longer they are on the heat.) Be careful and make sure you change sides as tortillas can burn easily if unattended.
  • Spread chicken mixture out on the warm tortillas, add lettuce and garnish with cilantro. Serve with lime wedges to juice over tacos.
