Pulled Pork Twice Baked Potatoes

Ingredients
  

  • 1 tablespoon Olive Oil
  • 2 cups Shredded Pork
  • 1 medium Onion thinly sliced
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Garlic Powder
  • 4 whole Baked Potatoes
  • 2 tablespoon Butter
  • 1 cup Sharp Cheddar shredded
  • 4 whole Green Onions sliced
  • 1/2 cup Sour Cream (opt.)

Instructions
 

  • Heat oil in a medium skillet. Add onion and cook until tender. About 2-3 minutes. Add in shredded pork, garlic powder, and smoked paprika and heat through.
  • Preheat oven to 350 degrees F. Slice baked potatoes and scoop out the center. Combine center with pork and butter. Top with cheddar cheese and green onions. Bake for 10 minutes or until cheese is melted. Serve and enjoy!
