Summertime ~ Mediterranean Salad
There is nothing quite like the flavor of fresh vegetables and herbs in the summer time. Living in the country makes having garden fresh vegetables and herb is easy. Living in South Dakota means our growing season is pretty short. So when the garden is full, I make this Mediterranean Salad as often as I can.
- 3 whole Tomatoes
- 2 medium Cucumber
- 1/2 cup Feta Cheese
- 1 cup Kalamata Olives
- 1/8 cup Olive Brine
- 1/2 cup Flat Leaf Parsley chopped (opt.)
- Chop the tomatoes removing the stem portion. Chop or slice the cucumbers, toss together with the remaining ingredients.
- Salt and Pepper to taste Allow the salad to sit for about 20 minutes before serving.
