Fast, simple and super tasty Guacamole!

When it comes to guacamole there are a ton of variations out there. Anything from the super simple to the incredibly complicated and each have their own unique flavor profile. I am a fan of the simple myself and this recipe is as simple as it gets. Plus, I can literally whip this up minutes before dinner is served, and it goes great with roast chicken, as well as just about any Mexican dish you can imagine.

And for the citrus lovers out there, I highly recommend you try doubling the lime in this recipe. While traveling in Mexico a few months ago, that is exactly how my friend Irina and I had our guac made at a small guacamole stand and it was AMAZING!



For me guacamole is one of the world’s perfect dips. It is thick, creamy and 100% healthy (provided you keep the ingredients simple). I use it as a veggie dig, chip dip, chicken topping and sandwich spread and never get tired of it.

  • 2 whole Avocado peeled and pitted
  • 1/4 teaspoon Salt
  • 2 cloves garlic minced
  • 1/2 whole Lime juiced
  • 1/2 cups Cilantro chopped (optional)


  • Mash avocado with a fork and add to a bowl. Mix in remaining ingredients, and stir well.
  • Allow guacamole to sit for at least 20 minutes before serving for optimum flavor. Serve with your favorite chips, or veggies


My favorite way to eat guacamole is with raw cauliflower and red peppers, or with spicy baked chicken!
