Favorite Spring/Summer Salad ~ Cilantro Cole Slaw!
I have to say the flavor is one of the things I love most about my Cilantro Cole Slaw, but then again I do really LOVE cilantro! But there are so many other things that makes this recipe fabulous.
Like the fact that it is dairy free for those of you who are skipping dairy for a while. Plus, being dairy free there is less concern about refrigeration when enjoying a relaxing day in the sun. Another amazing thing about this recipe is that it is rich in Omega-3s as the dressing is made with olive oil.
And the best part, besides the cilantro of course, is that you can easily substitute another herb or oil to fit your flavor and diet preferences.

Cilantro Cole Slaw
Ingredients
- 1 head Napa Cabbage
- 1 cup Celery chopped
- 1 cup Carrots chopped
- 1 cup Radishes chopped
- 1 cup olive oil
- 1/2 bunch Cilantro
- 2 cloves garlic
- 1 teaspoon Salt
- Fresh Cracked Black Pepper
Instructions
- Chop cabbage, celery, carrots, and radishes and mix them together in a large salad bowl.
- Combine olive oil, cilantro, garlic and salt in a blender and pulse until smooth. Drizzle olive oil mixture over cabbage and mix well to coat.
- Top with fresh cracked black pepper and chill for at least two hours before serving.
