
Chocolate Sweet Potato Cake
Ingredients
Cake
- 2 whole Small Sweet Potatoes (2 cups puree)
- 4 whole Eggs
- 3 tablespoons Coconut Oil
- 1/4 cup Cocoa powder
- 1/4 teaspoon Salt
- 1 teaspoon Vanilla Extract
- 1/2 cup Turbinado Sugar
- 1/2 cup Flour
- 1 teaspoon Cinnamon
Ganache Frosting
- 1 cup Dark Chocolate Chips
- 1 tablespoon Coconut Oil
- 1/4 cup Pecans chopped
Instructions
Cake
- Bake sweet potatoes and allow to cool. Preheat oven to 350 degrees. Peel sweet potatoes and blend until smooth in a food processor.
- Add in eggs, melted coconut oil, cocoa powder, sea salt vanilla, sugar, flour and cinnamon. Blend until smooth.
- Grease an 8"" x 8"" cake pan, and pour in the batter. Bake at 350 for 20 - 25 minutes. Allow cake to cool for 5-10 minutes before adding ganache.
Ganache Frosting
- Add water to the bottom pan of a double boiler. Add chips and coconut oil to the top pan. Heat until smooth, about 5 minutes. Spread ganache over cake, and top with chopped pecans.
