Ingredients
  

Cake

  • 2 whole Small Sweet Potatoes (2 cups puree)
  • 4 whole Eggs
  • 3 tablespoons Coconut Oil
  • 1/4 cup Cocoa powder
  • 1/4 teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Turbinado Sugar
  • 1/2 cup Flour
  • 1 teaspoon Cinnamon

Ganache Frosting

  • 1 cup Dark Chocolate Chips
  • 1 tablespoon Coconut Oil
  • 1/4 cup Pecans chopped

Instructions
 

Cake

  • Bake sweet potatoes and allow to cool. Preheat oven to 350 degrees. Peel sweet potatoes and blend until smooth in a food processor.
  • Add in eggs, melted coconut oil, cocoa powder, sea salt vanilla, sugar, flour and cinnamon. Blend until smooth.
  • Grease an 8"" x 8"" cake pan, and pour in the batter. Bake at 350 for 20 - 25 minutes. Allow cake to cool for 5-10 minutes before adding ganache.

Ganache Frosting

  • Add water to the bottom pan of a double boiler. Add chips and coconut oil to the top pan. Heat until smooth, about 5 minutes. Spread ganache over cake, and top with chopped pecans.
