
Chicken Broccoli & Rice
Ingredients
- 2 tablespoons olive oil
- 2 cloves garlic minced
- 1/2 whole Onion finely chopped
- 1-1/2 cup Basmati Rice
- 3 cups Chicken Stock
- 2 cups Shredded Chicken
- 8 ounces Mushrooms sliced
- 1 head Broccoli chopped
Instructions
- Heat oil in a skillet with a lid over high heat. Add garlic and onion, cook until tender. About 2-3 minutes.
- Add rice, chicken stock, chicken and mushrooms. Bring to a boil, then cover and reduce heat to medium low. Cook for 15 minutes. Add in broccoli and cook until all liquid evaporated and rice is tender.
