Chicken Broccoli & Rice

  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1/2 whole Onion finely chopped
  • 1-1/2 cup Basmati Rice
  • 3 cups Chicken Stock
  • 2 cups Shredded Chicken
  • 8 ounces Mushrooms sliced
  • 1 head Broccoli chopped


  • Heat oil in a skillet with a lid over high heat. Add garlic and onion, cook until tender. About 2-3 minutes.
  • Add rice, chicken stock, chicken and mushrooms. Bring to a boil, then cover and reduce heat to medium low. Cook for 15 minutes. Add in broccoli and cook until all liquid evaporated and rice is tender.
