Avocado Black Bean Salad

The combination of flavors and textures make this Avocado Black Bean Salad incredible!

This is one of the first recipes I made during my time as a cooking instructor. So, as you can imagine I have a lot of love for this recipe. It brings back one of my favorite memories, and reminds me that even when we are nervous as hell, we can still accomplish great things.

The class was packed and and thankfully full of fun amazing people ready to laugh. They stood by me as I battled nerves, struggled with oven issues, and even tossed an avocado through the air as I was attempting to demonstrate how easy the avocado slicer worked! Thankfully my kitchen assistant for the night caught the avocado as it was flying through the air, and saved if for this incredible salad! 

The combination of flavors and textures in this salad is what makes it incredible, not to mention the health properties. This salad works great as a side, or double the serving and have it as a meal.

Ingredients
  

  • 1 cup Greek Yogurt
  • 2 whole Avocado
  • 1 clove garlic
  • 1/4 teaspoon Salt
  • 1/2 whole Lime juiced
  • 8 cups Salad Greens
  • 1 cup Black Beans cooked
  • 1/2 cup Corn
  • 1 large Tomato
  • 1/2 cup Cilantro

Instructions
 

  • Combine 1/2 avocado with yogurt, garlic, salt and lime juice in a blender/food processor and blend until smooth. Add additional avocado as needed to reach desired thickness.
  • Dice remaining avocado and tomato. Spread lettuce over a large platter or individual serving plates. Top with black beans, corn, tomato, cilantro and remaining avocado. Drizzle avocado dressing over top & serve.
