Heat oil in a medium skillet and add garlic, onion and jalapeno. Cook until tender. About 2-3 minutes. Add salt, chili powder, cumin and chipotle seasonings. Cook until fragrant. Add beef and stock and heat an additional 10 minutes.
While beef is cooking, mix together diced tomatoes, cilantro, onion and lime juice and set aside. In a separate bowl combine mashed avocados, garlic, salt and lime juice.
Serve beef mixture over tortilla chips topping with pico de gallo, guacamole, cheese and salsa as desired.
