  1. Cut peaches and peel, adding them to a stock pot with 1/4 cup water. Bring to a boil, and add remaining ingredients. Reduce heat and allow mixture to simmer until peaches are softened and mushy.
  2. Taste periodically towards the end and adjust vanilla and spices as desired. Allow mixture to cool for at least 30 minutes.
  3. Mix until smooth in a blender, or if you like things a bit chunkier blend for a shorter period of time. Serve with toast, muffins or even over pound cake or ice cream for dessert!
