Instructions
  1. Create Spice Blend: Mix all spices together and set aside until ready to use.
  2. Heat butter in a large skillet over high heat. Add onion and cook until slightly charred. About 5-7 minutes.
  3. Add shredded pork, black beans, cooked rice and 3 tablespoons of the spice blend. Stir until well combined.
  4. Spray cooking spray on a large baking dish. Assemble burritos by placing adding burrito filling to the center of a tortilla. Fold over the ends and roll to enclose all the filling. Place each burrito in a large baking dish.
  5. Preheat oven to 350 degrees F. To make the gravy, melt butter over medium heat in a saucepan. Make a roux by sprinkling the melted butter with flour, whisking together until smooth. Slowly add the chicken stock, tomato sauce and 4 tablespoons of spice blend.
  6. Simmer for 10-15 minutes, stirring frequently, until gravy is rich and creamy. If it gets too thick, add a little water to thin the sauce. Top burritos with gravy mixture and shredded cheese. Bake for 20 minutes.
  7. Top burritos with diced sweet peppers and green onions. Serve and enjoy!
