Instructions
  1. Preheat oven to 450 degrees F. Lightly spray a mini muffin pan (24 muffin)
  2. Whisk together cornmeal, flour, sugar, baking powder, salt, baking soda, and chipotle. In a separate bowl combine onion, minced garlic, milk, and egg.
  3. Pour wet ingredients into dry ingredients and mix together (some lumps will remain). Spoon 1 tablespoon of batter into each mini muffin cup.
  4. Bake for 10 minutes, or until the hush puppies are firm to the touch and golden brown around the edges.
Recipe Notes

For a more traditional hush puppy, shallow fry these in a cast iron skillet at 350 degrees F for 2 minutes on each side.  I recommend peanut or coconut oil for frying.
