  1. Preheat oven to 425 degrees fahrenheit. Lay chicken thighs out on a shallow baking dish. Mix in green onions, peas, green beans, carrots and mushrooms.
  2. Whisk together chicken stock, arrowroot powder, and Dijon mustard. Pour chicken stock mixture over top of chicken. Bake 15 minutes or until heated through.
