Instructions
  1. In a medium sauce pan heat olive oil over medium-high heat. Add in garlic and saute 2-3 minutes. Add in rosemary and cook an addition 2 minutes or until fragrant.
  2. Add in vegetable stock, salt and barley. Bring to a boil and then reduce heat to a simmer.
  3. Cook covered until tenter and all liquid has been absorbed. About 40 minutes. Remove from heat and stir in Basil.
  4. Set aside 4 cups cooked barley for dinner tonight. Store remaining barley in 2 cup portions in freezer safe containers or bags and freeze up to 6 months.
