One of my favorite things to eat of all time is a combination of beans and rice. It make a quick throw together meal that is perfect for the smallest of budgets. You also will have a complete protein, providing you with all essential amino acids.
These Quick & Easy Cuban Black Beans are so simple to make, and can literally be ready in minutes. Plus, they are a freezer friendly food, which can save you a lot of time. Simply double the batch and store the left overs in the freezer for a night when time is short.
Quick & Easy Cuban Black Beans
Heat oil in a medium saucepan over medium heat. Add onion and garlic and cook until tender. About 2 -3 minutes. Add cumin and cook until fragrant.
Add beans and water and bring to a boil. Lower heat and cover, simmer about 10 minutes stirring occasionally. Remove from heat and add cilantro and salt and pepper to taste.
Serve two cups of beans with dinner. Store remaining beans in freezer safe bags or containers in 2 cup portions.
