Instructions
  1. Heat oil in a large skillet. Add onion, garlic and jalapeño, and cook until tender. About 2-3 minutes. Add salt, cumin and paprika. Cook until fragrant.
  2. In a large bowl combine pork, lime juice and cooked onion mixture. Mix together.
  3. Heat butter in the large skillet over high heat, and press carnitas into the pan frying on one side until slightly crusty.
  4. Serve with corn tortillas, cojita cheese, and fresh cilantro.
