Getting my kids to eat vegetables wasn’t always easy. My oldest son Thaine believed that all green foods were evil, unless they were M&Ms, and he could be as stubborn as they come at dinner time. But like all moms out there, I know the benefits of green foods, fiber and eating fresh. It is the green foods that help aid in our energy, as well as providing some powerful antioxidants. But health benefits isn’t something Thaine cared much about as a boy.

So imagine my surprise when he gobbled these up and asked for more the first time I made them! The key for me to get him eating green was cheese and bacon, and the Parmesan cheese offer the perfect amount of flavor. Using fresh makes a huge difference, and the Microplane Box Grater makes grating this cheese super easy.

Instructions
  1. Preheat your oven to 450 degrees and line a baking sheet with parchment paper or aluminum foil.
  2. Cut zucchini into fries ½ x ½ inch thick (You can make these bigger if you choose, but keep in mind that bigger fries will take longer to cook). Lay these out on your baking sheet in a single layer.
  3. Combine bread crumbs and Parmesan cheese. Melt ghee/butter and drizzle over top of fries, coating each one. Top with Parmesan bread crumbs, and bake until they are a nice golden brown, about 15 minutes.
