Instructions
  1. Adjust oven racks to the top and bottom thirds of the oven and preheat to 400 degrees.
  2. Arrange chicken in a single layer on two large baking dishes. Drizzle lemon juice over chicken and season generously with salt and pepper. Sprinkle rosemary over top, and place in the oven.
  3. Bake for 20 minutes, and switch baking dishes. Cook an additional 15 - 20 minutes or until chicken is cooked through.
  4. Set aside four pieces for dinner tonight if needed, and allow the remaining pieces of chicken to cool.
