Instructions
  1. Peel and slice the avocado. Measure out 1 cup pre-cooked black beans and mash up a bit. Mix in salt and pepper.
  2. Preheat butter in your skillet over medium heat. While skillet is pre-heating, beat two eggs together.
  3. Pour eggs into the skillet and top 1/2 with avocado slices, and 1/4 cup mashed beans. When omelet base is solid, flip the side with no toppings up over the toppings.
  4. Cook for a few minutes, until a nice golden brown, flip and cook the other side for a few minutes. Move omelet to a plate, and repeat these steps with the remaining ingredients.
  5. Top toast slices with any additional avocado slices as desired. Serve and enjoy immediately.
