Instructions
  1. Combine flour,1 teaspoon cinnamon, baking soda and baking powder in a large mixing bowl. In a separate bowl combine milk, eggs, and vanilla. Mix together thoroughly. Heat a large skillet or griddle over medium heat. Combine dry and wet ingredients.
  2. Ladle batter onto hot giddle. Cook for a few minutes turning over once edges appear cooked and bubbles begin to appear on top. Flip and cook an addition 2-3 minutes. Continue with remaining batter.
  3. Combine apple chunks and applesauce, to a small sauce pan adding remaining 1/2 teaspoon of cinnamon. Heat over medium heat 3-4 minutes until warmed all the way through.
  4. Serve applesauce mixture over top of pancakes.

Make up extra to heat up and eat throughout the week or freeze for a future fast and easy meal!
