This Apple Buffalo Chicken Salad is tangy, fresh, and crisp!

That is exactly how my guest describe the Apple Buffalo Chicken Salad, every time I make it. It a great way to use up the fresh ingredients in your refrigerator, as well as left over Buffalo Chicken. I love this best for lunch, but it tastes great on a hot summer evening with a cool glass of chardonnay!

***Cooking note: This recipe was tossed together using pre-cooked Lemon Rosemary Chicken. Having pre-cooked chicken makes tossing this recipe together in minutes possible.  However pre-cooked chicken isn’t necessary to enjoy this recipe. You will simply need to adjust cooking time to ensure the chicken is cooked all the way through.

Instructions
  1. Heat butter in a large skillet over medium high heat. Add in chicken and Sriracha Sauce. Cook until heated through. About 5 minutes
  2. Add avocado, yogurt, garlic, Italian herbs, salt and lime juice to a blender. Blend until smooth.
  3. Spread lettuce out onto a large platter or 4 individual serving plates. Top with chicken mixture, chopped apples, sweet red bell pepper and smoked almonds. Drizzle with dressing.
Recipe Notes

For an added kick you can also add Sriracha to the dressing, 1 teaspoon at a time until you have reached the desired flavor.
