Instructions
  1. Combine eggs, cottage cheese, oats and vanilla extract in a blender, and blend until smooth. Mix in blueberries by hand.
  2. Spray cooking spray in a large skillet and heat over medium heat.
  3. Cook pancakes approximately 2-3 minutes per side, until golden brown.
